  • 1 lb ground chicken
  • 1 tablespoon vegetable oil
  • 1/2 cup chopped onions
  • 1/2 cup chopped mushrooms Can substitute with bell peppers or zucchini.
  • 1/4 cup soy sauce Can use tamari for a gluten-free option.
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/4 cup water chestnuts, chopped
  • to taste Salt and pepper
  • 1 head lettuce (butter or romaine) For serving.

Method
 

Preparation
  1. Heat the vegetable oil in a skillet over medium heat.
  2. Add the ground chicken and cook until browned and cooked through.
  3. Stir in the chopped onions and mushrooms and cook until they soften.
  4. Pour in the soy sauce, hoisin sauce, rice vinegar, and sesame oil, stirring together for an additional 2 minutes.
  5. Mix in the chopped water chestnuts and season with salt and pepper to taste.
  6. Scoop the chicken mixture into lettuce leaves for serving.

Notes

Serve with additional dipping sauces like sweet chili sauce or extra hoisin. Leftovers can be stored in an airtight container for up to three days. For best texture, serve with fresh lettuce.
