Method
 

Preparation
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onions, carrots, and celery, sautéing them until they become tender.
  3. Stir in the minced garlic and cook until fragrant.
  4. Incorporate the cooked chicken, chicken broth, spinach, thyme, basil, salt, and pepper into the pot.
  5. Bring the mixture to a boil, then reduce the heat to let it simmer for about 20 minutes.
  6. Add the gnocchi and cook according to the package instructions.
  7. Gently stir in the heavy cream and heat everything through.
  8. Adjust the seasoning if needed and serve hot.
