  • 2 cups Rotisserie chicken, shredded Using pre-shredded chicken saves prep time.
  • 1 cup Celery, diced
  • 1 small Yellow onion, chopped
  • 1 cup Matchstick carrots
  • 6 cloves Garlic, minced
  • 1/2 tsp Sage
  • 1 1/2 cups fresh Spinach
  • 4 cups Chicken broth
  • 1 tsp Balsamic vinegar
  • 1 lb Potato gnocchi
  • 1/4 cup All-purpose flour Can adjust based on desired thickness.
  • 2 tsp Italian seasoning
  • Kosher salt to taste
  • Fresh cracked Pepper to taste
  • 4 tbsp Butter
  • 1 1/2 cups Heavy cream Can substitute with lower-fat milk for a lighter version.

Method
 

Cooking Process
  1. In a large pot, melt the butter over medium heat. Add the yellow onion, celery, carrots, and garlic. Sauté until the vegetables are tender.
  2. Add the shredded rotisserie chicken, chicken broth, and sage to the pot. Bring everything to a simmer.
  3. Stir in the potato gnocchi and cook for about 2-3 minutes until they float to the surface.
  4. Whisk in the flour, allowing the soup to thicken, and then add the heavy cream and spinach.
  5. Season the mixture with Italian seasoning, balsamic vinegar, kosher salt, and cracked pepper.
  6. Cook for another few minutes until heated through, and the spinach is wilted.
  7. Serve hot and enjoy the creamy goodness!

Notes

This soup is fantastic with a side of garlic bread or a fresh salad. Consider topping it with Parmesan cheese for extra flavor. Store leftovers in an airtight container for up to 3 days.
