- In a separate bowl, mix together the flour, baking powder, baking soda, and additional salt and pepper.
- Heat oil in a skillet over medium heat, ensuring it’s hot enough for frying.
- Dredge each piece of chicken in the flour mixture, dip it back into the buttermilk mix, and finally coat it again in the flour mixture.
- Fry the chicken in the hot oil for about 6-8 minutes per side, until golden brown and cooked through.
- Drain on paper towels and serve hot.
Notes
For the ultimate crunch, let the coated chicken rest for about 10 minutes before frying. You can also try using different herbs and spices in the buttermilk for unique flavors. Leftovers can be stored in an airtight container for 3-4 days, best reheated in the oven.
