Preparation
- Heat a skillet over medium heat and add a little butter or olive oil.
- Season the chicken with salt and pepper (and lemon juice if desired) and add to the skillet. Cook until warmed through, about 5-6 minutes.
Assembly
- Remove the chicken and start assembling the sandwich. On one slice of bread, layer the chicken, followed by the avocado, and sprinkle cheese on top.
- Top with the second slice of bread and press down gently.
Cooking
- Place the sandwich back into the skillet and toast for about 3-4 minutes on each side, or until the bread is golden brown and the cheese has melted.
- Remove from heat, slice in half, and serve immediately.
Notes
Serve with a light salad, sweet potato fries, or a bowl of soup. Store leftovers in an airtight container in the refrigerator for up to two days, or freeze for up to one month.
