Sandwich Ingredients
  • 2 slices slices of hearty bread (like sourdough or whole grain) Feel free to substitute for gluten-free bread if needed.
  • 1 cup cooked chicken breast, shredded or sliced Grilled or rotisserie chicken works best.
  • 1 ripe avocado mashed or sliced avocado Make sure it's ripe for easy cutting.
  • 1/2 cup shredded cheese (such as Monterey Jack or cheddar) Experiment with different cheeses like pepper jack for added flavor.
  • to taste butter or olive oil For grilling the sandwich.
  • to taste fresh lemon juice, salt, and pepper Optional for seasoning.

Method
 

Preparation
  1. Heat a skillet over medium heat and add a little butter or olive oil.
  2. Season the chicken with salt and pepper (and lemon juice if desired) and add to the skillet. Cook until warmed through, about 5-6 minutes.
Assembly
  1. Remove the chicken and start assembling the sandwich. On one slice of bread, layer the chicken, followed by the avocado, and sprinkle cheese on top.
  2. Top with the second slice of bread and press down gently.
Cooking
  1. Place the sandwich back into the skillet and toast for about 3-4 minutes on each side, or until the bread is golden brown and the cheese has melted.
  2. Remove from heat, slice in half, and serve immediately.

Notes

Serve with a light salad, sweet potato fries, or a bowl of soup. Store leftovers in an airtight container in the refrigerator for up to two days, or freeze for up to one month.
