  • 2 cups cooked chicken, shredded
  • 1 package (16 oz) gnocchi Store-bought or homemade
  • 1 medium onion, chopped
  • 2 carrots chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish Adds color and flavor

Method
 

Preparation
  1. In a large pot, sauté the chopped onion, carrots, and celery over medium heat until they soften.
  2. Add minced garlic to the pot and cook for another minute, just until fragrant.
  3. Pour in the chicken broth and bring the mixture to a gentle boil.
  4. Stir in the gnocchi, cooking until they start to float to the surface.
  5. Add in the shredded chicken, thyme, salt, and pepper, mixing well for an even flavor distribution.
  6. Reduce the heat and slowly stir in the heavy cream.
  7. Allow the soup to simmer for a few minutes and garnish with fresh parsley before serving.

Notes

For a quicker version, use rotisserie chicken. Adjust seasoning to taste and feel free to incorporate other vegetables to suit your preference.
