  • 4 cups chicken broth
  • 2 cups mixed vegetables (like carrots and peas) Can substitute with whatever you have on hand.
  • 1 teaspoon dried thyme

For the Dumplings
  • 1 ½ cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • 2 tablespoons butter, melted

Preparation
  1. Begin by heating the olive oil in a large pot over medium heat.
  2. Add the chicken breasts and cook until golden brown on both sides.
  3. Pour in the chicken broth and bring to a boil.
  4. Once boiling, add the mixed vegetables, thyme, salt, and pepper. Reduce heat and let simmer for 15 minutes.
Dumpling Preparation
  1. While the chicken is cooking, prepare the dumplings. In a bowl, mix together the flour, baking powder, and salt.
  2. Slowly stir in the milk and melted butter until just combined.
  3. Drop spoonfuls of the dumpling mixture onto the simmering chicken broth.
  4. Cover the pot and let the dumplings steam for about 15-20 minutes without lifting the lid until they are fluffy and cooked through.
