  • 2 pieces Chicken breasts, boneless skinless
  • 12 oz Fettuccine pasta
  • 3 cloves Garlic, minced
  • 2 cups Heavy cream
  • 3/4 cup Parmesan cheese, grated Freshly grated for best flavor
  • 1/2 cup Butter
Seasonings and garnish
  • 2 tbsp Olive oil
  • 1 1/2 tbsp Flour
  • 1 1/2 tsp Salt
  • 1 1/2 tsp Fresh ground Pepper
  • 2 tbsp Parsley, chopped Optional for garnish

Method
 

Cooking the pasta
  1. Begin by cooking the fettuccine according to package instructions. Once cooked, drain the pasta and set it aside.
Sautéing the chicken
  1. In a large skillet, heat the olive oil over medium heat. Season each chicken breast with salt and pepper, then add to the skillet.
  2. Cook the chicken for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and slice into strips.
Preparing the sauce
  1. In the same skillet, melt the butter over medium heat and then add the minced garlic. Cook for about a minute, until fragrant.
  2. Sprinkle the flour over the garlic, stirring to combine. Gradually whisk in the heavy cream, stirring constantly until the mixture thickens.
  3. Stir in the grated Parmesan cheese until fully melted and the sauce is smooth.
Combining and serving
  1. Add the cooked fettuccine and the sliced chicken to the creamy sauce, tossing everything together to coat evenly.
  2. Garnish with chopped parsley before serving and enjoy!

Notes

To enhance flavor, consider marinating the chicken in olive oil, garlic, and herbs for about 30 minutes before cooking. Freshly grated Parmesan melts better than pre-grated options.
