Ingredients
  

Marinade
  • 3/4 cup milk (whole preferred) Use whole milk for best flavor.
  • 1 tablespoon white vinegar Creates a buttermilk substitute.
  • 1 large egg
  • 1 teaspoon fine sea salt
Chicken
  • 2 large boneless, skinless chicken breasts, cut into 1/2-inch cubes Around 1.25 pounds.
Breading
  • 1.5 cups flour
  • 1/2 cup cornstarch
  • 1/4 cup powdered sugar
  • 1 teaspoon fine sea salt
  • 1/4 teaspoon celery salt
  • 3/4 teaspoon white pepper
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon mustard powder
Frying
  • 3 cups peanut oil For frying.
Dipping Sauce
  • 1/4 cup mayo (full-fat, Best Foods)
  • 1.5 teaspoons yellow mustard
  • 1 large lemon Juiced.
  • 1.5 tablespoons honey
  • 1 tablespoon honey BBQ sauce (like Sweet Baby Rays)

Method
 

Preparation
  1. Cut the chicken into small, even 1/2-inch cubes.
  2. In a bowl, whisk together the milk and vinegar, and let sit for 5 minutes.
  3. Add the egg and salt to the milk mixture and whisk until smooth.
  4. Toss the cubed chicken into the marinade until well coated, cover, and refrigerate for at least 1 hour.
  5. In a large shallow bowl, combine all the breading ingredients and mix well.
  6. Remove about 3 tablespoons of the marinade and drizzle over the flour mixture, mixing until small clumps form.
Cooking
  1. Heat peanut oil in a large pot over medium-high heat to 350°F.
  2. Using tongs, transfer chicken from the marinade to the breading mix, toss to coat.
  3. Carefully lower a few pieces of chicken into the hot oil, without overcrowding.
  4. Fry for 2 to 3 minutes, stirring halfway through, until golden brown.
  5. Remove chicken using a strainer or slotted spoon and drain on paper towels.
  6. Lightly sprinkle with salt and serve immediately.
Dipping Sauce Preparation
  1. In a small bowl, whisk together mayo, mustard, honey, BBQ sauce, and lemon juice. Adjust seasoning with salt and pepper.

Notes

Store leftovers in an airtight container in the fridge for up to three days or freeze for up to three months. Reheat in the oven for crispness.
