Cheesy Beef Tortilla Pizzas

Ingredients
  

Main Ingredients
  • 1 pound Ground Beef (or turkey or chicken) Can use ground turkey or chicken as a leaner alternative.
  • 1 medium Yellow Onion, Diced (optional) Optional ingredient to add flavor.
  • 1 packet Taco Seasoning
  • 1/4 cup Water
  • 3/4 to 1 cup Canola, Vegetable or Avocado Oil For frying the tortillas.
  • 12 pieces Taco Sized Flour Tortillas Fresh tortillas recommended.
  • 15 ounces Can of Refried Beans
  • 10 ounces Can of Red Enchilada Sauce
  • 8 ounces Shredded Cheddar Cheese
  • 8 ounces Shredded Pepper Jack Cheese
  • 1 to 2 pieces Tomatoes, Chopped
  • 2 to 3 tablespoons Sliced Green Onions

Method
 

Preparation
  1. In a large skillet over medium heat, brown the ground beef along with the diced onion until fully cooked and the onions are softened. Drain any excess grease.
  2. Stir in the taco seasoning and 1/4 cup water. Reduce the heat to low and let it simmer for 3 to 5 minutes until the mixture thickens. Remove from heat.
  3. In a separate skillet, heat oil over medium-high heat. Fry each tortilla for about 30 seconds on each side until they are golden and crispy. Transfer them to a paper towel-lined plate to drain any excess oil.
  4. Preheat your oven to 400 degrees F (200 degrees C) and line a sheet pan with parchment paper.
Assembly
  1. For each pizza, spread a layer of refried beans on one tortilla, add a generous amount of the seasoned beef, and sprinkle with cheese. Top with a second tortilla.
  2. Spread enchilada sauce over the top tortilla and add more cheese. Repeat this process to assemble 6 pizzas and place them on the prepared sheet pan.
Baking
  1. Bake for 6 to 8 minutes, or until the cheese is melted and bubbly. After removing them from the oven, top with chopped tomatoes and green onions. Serve immediately for the best taste.

Notes

These pizzas are best enjoyed fresh. If you have leftovers, store them in an airtight container in the fridge. To revive, use an oven or air fryer for crispiness.
