Ingredients
  

Crust
  • 2 cups graham cracker crumbs
  • ½ cup unsalted butter, melted
Filling
  • 32 oz cream cheese, room temperature (4 packages of 8 oz each) Ensure it's at room temperature for easy mixing.
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs Add one at a time.
  • 1 cup sour cream

Method
 

Preparation
  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, combine the graham cracker crumbs and melted butter. Mix until well combined.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  4. In a large mixing bowl, beat the cream cheese until smooth.
  5. Gradually add the sugar and vanilla, mixing until well incorporated.
  6. Add the eggs, one at a time, ensuring everything is blended smoothly after each addition.
  7. Mix in the sour cream until the mixture is creamy and smooth.
  8. Pour the filling over the crust in the springform pan.
Baking
  1. Bake in the preheated oven for about 1 hour or until the center is set but still slightly jiggly.
  2. Turn off the oven and let the cheesecake sit in the oven with the door slightly ajar for 1 hour.
  3. Remove from the oven and allow it to cool completely before refrigerating for at least 4 hours or overnight for best results.

Notes

Make sure all ingredients are at room temperature before mixing for a smooth consistency. You can get creative by adding flavors like lemon zest or chocolate chips.
