Preparation
- Preheat your oven to 325°F (163°C).
- In a bowl, combine the graham cracker crumbs and melted butter. Mix until well combined.
- Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
- In a large mixing bowl, beat the cream cheese until smooth.
- Gradually add the sugar and vanilla, mixing until well incorporated.
- Add the eggs, one at a time, ensuring everything is blended smoothly after each addition.
- Mix in the sour cream until the mixture is creamy and smooth.
- Pour the filling over the crust in the springform pan.
Baking
- Bake in the preheated oven for about 1 hour or until the center is set but still slightly jiggly.
- Turn off the oven and let the cheesecake sit in the oven with the door slightly ajar for 1 hour.
- Remove from the oven and allow it to cool completely before refrigerating for at least 4 hours or overnight for best results.
Notes
Make sure all ingredients are at room temperature before mixing for a smooth consistency. You can get creative by adding flavors like lemon zest or chocolate chips.
