Ingredients
  

Wet Ingredients
  • 1/4 cup Honey
  • 3 tbsp Molasses
  • 1 cup Oats
  • 1 1/4 cup Water Warm water
  • 3 tbsp Canola oil
Dry Ingredients
  • 1 3/4 cups Bread flour
  • 1 3/4 cups Whole wheat flour
  • 1 tbsp Brown sugar
  • 1 1/2 tbsp Cocoa powder
  • 1/2 tbsp Cornmeal (white)
  • 1 tsp Salt
  • 1 tsp Sugar
  • 2 1/4 tsp Yeast (instant dry)

Method
 

Preparation
  1. In a mixing bowl, combine the honey, molasses, oats, and warm water. Stir well and let it sit for about 10 minutes until foamy.
  2. In another bowl, mix the bread flour, whole wheat flour, brown sugar, cocoa powder, cornmeal, salt, and sugar.
  3. Add the yeast mixture and canola oil to the dry ingredients. Mix until combined.
  4. Knead the dough for about 8-10 minutes until it’s smooth.
Rising
  1. Place the dough in a greased bowl, cover it, and let it rise for about 1 hour, or until doubled in size.
  2. Preheat your oven to 350°F (175°C).
  3. Once risen, punch down the dough, shape it into a loaf, and place it in a greased loaf pan.
  4. Allow it to rise again for about 30 minutes.
Baking
  1. Bake for 30-35 minutes or until the bread sounds hollow when tapped.
  2. Let it cool before slicing.

Notes

For best results, knead the dough on a floured surface and allow to rise in a warm space. Use substitutions such as maple syrup for honey or gluten-free flour if needed.
