Preparation
- In a mixing bowl, combine the honey, molasses, oats, and warm water. Stir well and let it sit for about 10 minutes until foamy.
- In another bowl, mix the bread flour, whole wheat flour, brown sugar, cocoa powder, cornmeal, salt, and sugar.
- Add the yeast mixture and canola oil to the dry ingredients. Mix until combined.
- Knead the dough for about 8-10 minutes until it’s smooth.
Rising
- Place the dough in a greased bowl, cover it, and let it rise for about 1 hour, or until doubled in size.
- Preheat your oven to 350°F (175°C).
- Once risen, punch down the dough, shape it into a loaf, and place it in a greased loaf pan.
- Allow it to rise again for about 30 minutes.
Baking
- Bake for 30-35 minutes or until the bread sounds hollow when tapped.
- Let it cool before slicing.
Notes
For best results, knead the dough on a floured surface and allow to rise in a warm space. Use substitutions such as maple syrup for honey or gluten-free flour if needed.
