Preparation of the Filling
- Heat a large skillet over medium heat. Add the ground beef and diced onion, cooking until the beef is browned and the onion is softened.
- Drain any excess fat and return the mixture to the stove. Stir in the diced cheese and ketchup, seasoning with salt and pepper until the cheese has melted. Let the filling cool slightly.
Assembly of Spring Rolls
- Lay a spring roll wrapper on a clean surface. Place about 2 tablespoons of the beef filling diagonally across the center of the wrapper.
- Fold the bottom corner up, fold in the sides, and then roll tightly towards the top corner, sealing the edges with the cornstarch and water mixture.
Cooking the Spring Rolls
- Heat vegetable oil in a skillet until it reaches 350°F (175°C). Fry the spring rolls in batches for about 3 to 4 minutes or until they are golden brown, turning occasionally.
- Remove them from the pan and drain on paper towels.
Preparing the Dipping Sauce
- Combine the mayonnaise, sweet pickle relish, ketchup, minced onion, and paprika in a bowl, mixing well to combine.

- Serve the spring rolls hot, pairing them with the dipping sauce on the side for a delicious experience.
