Preparation
- Preheat your oven to 350°F and line a baking sheet with parchment paper.
- In a medium skillet, melt the butter, then stir in the flour, granulated sugar, cinnamon, and salt until fully moistened and clumping.
- Return it to the heat, stirring frequently until the streusel turns golden brown. Let it cool on a plate.
- Beat softened butter with granulated and brown sugars until fluffy.
- Add the egg, concentrated apple juice, and vanilla extract, mixing until well combined.
- Gently fold in flour, spices, salt, baking soda, and baking powder until just combined.
Baking
- Scoop out nine balls of cookie dough onto the prepared baking sheet and bake for about 12 minutes or until slightly golden.
- Allow them to cool completely.
Frosting
- Cream the cream cheese and butter until smooth.
- Add powdered sugar and caramel, whipping until fluffy.
- Frost the cooled cookies, add cubed green apples on top, sprinkle with cooled streusel, and drizzle with additional caramel.
Notes
