  • 1 teaspoon Pepper Adjust to taste
  • 2 cloves Garlic Minced

Method
 

Preparation
  1. Heat a large pot over medium heat.
  2. Add the diced onion and minced garlic, sautéing until they are softened and fragrant.
  3. Toss in the chopped carrots and broccoli, cooking for a few minutes until they start to soften.
  4. Pour in the vegetable broth and bring the mixture to a boil.
  5. Once boiling, reduce the heat and let it simmer until the vegetables are tender.
  6. Stir in the cream and sharp cheddar cheese, mixing until everything is melted and smooth.
  7. Season the soup with salt and pepper to taste.
  8. For a creamy texture, use an immersion blender to blend the soup until smooth, or leave it chunky if you prefer.
  9. Serve this comforting soup warm.

Notes

For enhanced flavor, toast the garlic a bit longer. For a spicy kick, add cayenne pepper or crushed red pepper flakes. Freshly grated cheese improves texture and melting.
