  • 4 cups fresh broccoli, chopped
  • 1 cup matchstick carrots
  • 1 cup celery, chopped
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
Liquids
  • 4 cups vegetable broth
  • 1 cup heavy cream
Cheese
  • 2 cups sharp cheddar cheese, shredded
Seasoning
  • 1 teaspoon salt
  • 1 teaspoon pepper

Method
 

Preparation
  1. In a slow cooker, combine fresh broccoli, matchstick carrots, celery, chopped onion, minced garlic, and vegetable broth.
  2. Season with salt and pepper to taste.
Cooking
  1. Cook on low for 4-6 hours, or until the vegetables are tender.
  2. Add sharp cheddar cheese and heavy cream. Stir until the cheese is melted and everything is well combined.
  3. Serve hot, accompanied by garlic bread for a complete meal.

Notes

For an even creamier texture, consider blending a portion of the soup after cooking before adding cheese. This soup can be frozen for up to 3 months.
