Preparation
- Preheat your oven to 350 degrees F.
- In a small saucepan over medium heat, bring the milk to a simmer. Reduce the heat to low, then whisk in the Velveeta cheese until fully melted.
- Incorporate half of the shredded cheddar, Worcestershire sauce, and Tabasco sauce, whisking until creamy and smooth.
- Prepare the chicken by seasoning both sides with salt, pepper, and garlic powder.
- Spray a 9x13 inch baking dish with nonstick spray and lay the seasoned chicken in the dish. Add the frozen broccoli on top.
Baking
- Pour about 3/4 of the cheese sauce over the broccoli and chicken, reserving the rest for later use.
- In a microwave-safe bowl, melt the butter and combine it with the crushed Ritz crackers, stirring until the crackers are fully coated.
- Sprinkle the buttered crackers over the cheese sauce.
- Bake for 30 minutes in the preheated oven. After 30 minutes, pour the remaining cheese sauce on top and broil on low for 2-3 minutes or until the cheese is bubbly and golden.
- Use an instant-read thermometer to check that the chicken has reached 160 degrees F before serving.
Notes
For a complete meal, pair it with a fresh side salad or roasted vegetables. To store leftovers, place them in an airtight container in the refrigerator for up to 4 days or freeze for up to three months.
