Ingredients
  

Dairy and Cheese
  • 1 cup 2 percent milk
  • 8 oz Velveeta, cubed
  • 8 oz Medium Cheddar cheese, shredded and divided Reserve half for topping
  • 4 tbsp butter Melted for the Ritz cracker topping
Chicken and Vegetables
  • 4 pieces chicken breasts (5 oz each)
  • 12 oz frozen broccoli florets
Seasonings and Sauces
  • 1/4 tsp Worcestershire sauce
  • 1/4 tsp Tabasco sauce
  • 1/2 tsp coarse sea salt
  • 1/4 tsp ground black pepper
  • 1/4 tsp garlic powder
Topping
  • 1 sleeve Ritz crackers Crushed for topping

Preparation
  1. Preheat your oven to 350 degrees F.
  2. In a small saucepan over medium heat, bring the milk to a simmer. Reduce the heat to low, then whisk in the Velveeta cheese until fully melted.
  3. Incorporate half of the shredded cheddar, Worcestershire sauce, and Tabasco sauce, whisking until creamy and smooth.
  4. Prepare the chicken by seasoning both sides with salt, pepper, and garlic powder.
  5. Spray a 9x13 inch baking dish with nonstick spray and lay the seasoned chicken in the dish. Add the frozen broccoli on top.
Baking
  1. Pour about 3/4 of the cheese sauce over the broccoli and chicken, reserving the rest for later use.
  2. In a microwave-safe bowl, melt the butter and combine it with the crushed Ritz crackers, stirring until the crackers are fully coated.
  3. Sprinkle the buttered crackers over the cheese sauce.
  4. Bake for 30 minutes in the preheated oven. After 30 minutes, pour the remaining cheese sauce on top and broil on low for 2-3 minutes or until the cheese is bubbly and golden.
  5. Use an instant-read thermometer to check that the chicken has reached 160 degrees F before serving.

Notes

For a complete meal, pair it with a fresh side salad or roasted vegetables. To store leftovers, place them in an airtight container in the refrigerator for up to 4 days or freeze for up to three months.
