  • 4 cups broccoli florets
  • 1 cup shredded carrots
  • 1/2 cup chopped onion
  • 3 tablespoons butter
  • 1/4 cup all-purpose flour Can be substituted with gluten-free flour.
  • 2 cups chicken or vegetable broth
  • 1 cup whole milk
  • 2 cups shredded cheddar cheese Freshly shredded is recommended for best melting.

Method
 

Preparation
  1. Melt the butter in a large pot over medium heat.
  2. Add the chopped onion and shredded carrots to the pot, and sauté until the vegetables are soft (about 5 minutes).
  3. Stir in the broccoli florets and cook for a few more minutes.
  4. Sprinkle flour over the sautéed vegetables and stir well to coat.
  5. Gradually pour in the chicken or vegetable broth while stirring until the mixture thickens.
  6. Lower the heat and add the whole milk, stirring to blend.
  7. Fold in the shredded cheddar cheese until completely melted.
  8. Season with salt and pepper to taste, and serve hot.

Notes

Serve with crusty bread or a light salad. Best served warm for maximum creaminess. Consider adding toppings like croutons or black pepper for extra flavor.
