Ingredients
  

Pasta and Base
  • 1 pound rotini pasta Ideal for holding onto the cheese sauce.
  • 4 tablespoons butter For making the roux.
  • 1/4 cup all-purpose flour To thicken the cheese sauce.
Cheese Sauce
  • 2 cups half & half Provides a creamy texture.
  • 12 ounces deli-sliced American cheese For creamy texture.
  • 1 cup shredded cheddar cheese Adds sharpness.
  • 1/2 cup grated Parmesan cheese For extra flavor.
Seasonings
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon mustard powder

Method
 

Preparation
  1. Cook the rotini pasta in a large pot of boiling salted water until al dente, then drain and set aside.
  2. In a large saucepan, melt the butter over medium heat. Whisk in the flour until smooth, creating a roux.
  3. Gradually add the half & half while whisking constantly until the mixture thickens.
  4. Lower the heat and add the American cheese, stirring until melted.
  5. Mix in the cheddar and Parmesan cheeses until fully melted and combined.
  6. Add the paprika, salt, black pepper, garlic powder, and mustard powder, stirring until all spices are incorporated.
  7. Finally, add the cooked rotini to the cheese sauce, stirring well to ensure every piece is coated.
Serving
  1. Transfer to a serving dish and serve hot.

Notes

Can be served as a main dish or as a side. Add hot sauce or fresh herbs for extra flavor. Store leftovers in an airtight container for up to three days.
