Ingredients
  

For the Marinade
  • 1 pound top sirloin (or flank steak), thinly sliced Choose a tender cut for the best results.
  • 1/2 teaspoon baking soda
  • 1 teaspoon brown sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon water
For the Sauce
  • 1/4 cup soy sauce
  • 1/4 cup beef stock (or water)
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 1 tablespoon sesame oil
For the Stir Fry
  • 1 small head broccoli, florets only (12 ounces, about 4 cups) Cut into uniform-sized pieces for even cooking.
  • 2 tablespoons neutral oil, divided (such as vegetable or canola) Used for stir-frying the broccoli and beef.
  • Cooked rice for serving Cooked rice For serving alongside the stir fry.
  • Sesame seeds for garnish Sesame seeds Optional garnish for added flavor and presentation.

Method
 

Marinating the Beef
  1. In a bowl, combine soy sauce, brown sugar, cornstarch, water, and baking soda. Add the sliced beef and toss to coat evenly. Let it rest while you prepare the sauce.
Making the Sauce
  1. In a separate bowl, whisk together soy sauce, beef stock, brown sugar, garlic, sesame oil, and cornstarch until smooth. Set aside.
Cooking the Broccoli
  1. Heat 1 tablespoon of neutral oil in a large pan or wok over high heat. Add the broccoli and toss to coat evenly. Stir-fry for 1-2 minutes, then pour in 1/4 cup of water, cover with a lid, and steam for 3-4 minutes, shaking the pan occasionally. Remove the lid and transfer the broccoli to a plate.
Cooking the Beef
  1. Add 1 tablespoon of oil to the same pan. Once hot, add the marinated beef in a single layer and cook until no longer pink, stirring occasionally for even browning.
Adding the Sauce
  1. Pour in the prepared sauce and let it simmer for 1-2 minutes until it starts to thicken and turn glossy.
Combining Everything
  1. Add the broccoli back to the pan and toss everything together for another minute, ensuring it’s evenly coated in the sauce.
Serving
  1. Transfer to a plate and garnish with sesame seeds or green onions if you prefer. Serve it with warm rice or noodles for a complete meal.
