Ingredients
  

For the Chicken
  • 1 lb chicken breasts
  • 2 cups Mojo Criollo marinade Can be homemade with lime juice, garlic, and spices.
  • 1 tbsp oil For sautéing
  • 4 oz chipotle sauce Adjust to taste for spice level.
For the Tacos
  • 8-12 pieces corn tortillas Use fresh for best results.
  • 1/8 cup pickled red onion, thinly sliced
  • 1/4 cup queso fresco cheese, grated
  • 2-3 pieces radishes, sliced
  • 2 tbsp cilantro, minced For garnish
  • 1 pieces lime, cut into wedges For serving

Method
 

Marinate the Chicken
  1. In a large zipper bag, marinate chicken breasts overnight in the Mojo Criollo marinade.
Bake the Chicken
  1. Preheat the oven to 375°F (190°C). Place the chicken breasts on a rimmed baking sheet and bake for 20 minutes or until the internal temperature reaches 155°F (68°C).
  2. Remove the chicken from the oven and let it rest for 5 minutes, then chop the chicken into bite-sized pieces.
Sauté the Chicken
  1. Heat a large skillet over medium heat, add 1 tablespoon of oil, then add the chopped chicken and chipotle sauce. Sauté for 3 to 4 minutes until warmed through and well-coated.
Prepare the Tortillas
  1. In a separate skillet, lightly grease with nonstick spray or olive oil, and heat the tortillas for about 1 minute on each side until warmed.
Assemble the Tacos
  1. Arrange the heated tortillas in a taco holder, fill each with the chicken mixture, and top with cheese, pickled red onions, radish slices, and cilantro.
  2. Serve with lime wedges.

Notes

For best results, consider marinating the chicken longer than overnight. Use fresh tortillas to elevate the dish and customize toppings to fit your taste.
