Ingredients
  

Dough Ingredients
  • 2 tsp Active yeast, dry Ensure yeast is fresh and active
  • 1/3 cup Brown sugar, packed
  • 410 g Bread flour Can substitute all-purpose flour
  • 1/2 tsp Baking powder
  • 1 tsp Salt
  • 8 tbsp Butter, unsalted Melted for brushing
  • 1/2 cup Whole milk
  • 2 1/2 cup Water Warm water for activating yeast
Boiling and Topping
  • 2 tbsp Baking soda
  • 1 tsp Pretzel salt, coarse For sprinkling on top

Method
 

Preparation
  1. In a large bowl, dissolve the active yeast and brown sugar in warm water. Let it sit for about 5 minutes until foamy.
  2. In a separate bowl, mix together the bread flour, baking powder, and salt.
  3. Combine the yeast mixture with the dry ingredients, kneading until a smooth dough forms.
  4. Allow the dough to rise in a warm place for about 1 hour or until it doubles in size.
Baking
  1. Preheat your oven to 450°F (232°C).
  2. In a large pot, bring the water and baking soda to a boil.
  3. Punch down the dough and divide it into 6 equal pieces. Roll each piece into a rope and shape it into a pretzel.
  4. Boil each pretzel in the baking soda water for about 30 seconds, then remove and place it on a baking sheet.
  5. Brush the pretzels with melted butter and sprinkle with coarse salt.
  6. Bake for 10-12 minutes or until golden brown.
  7. Let cool slightly before serving.

Notes

These pretzels are best served warm. Store in an airtight container for up to 2 days or freeze for longer storage.
