  • 3 tablespoons butter Unsalted is recommended.
  • 1 cup heavy cream or half and half For a lighter option, use half and half.
  • 4 cloves garlic, minced
  • 1.5 cups freshly grated Parmesan cheese Fresh cheese is preferred for best flavor.
  • 1/4 teaspoon fresh grated nutmeg
  • to taste Salt and freshly cracked pepper

Method
 

Preparation
  1. Melt the butter in a medium saucepan over medium-low to medium heat.
  2. Once melted, add the cream and bring it to a gentle simmer.
  3. Cook the mixture, whisking often for about 5 minutes until it begins to thicken slightly.
  4. Stir in the minced garlic and cook for an additional minute to infuse the flavor.
Cooking
  1. Gradually add the Parmesan cheese in batches, whisking continuously until it melts completely and the sauce is smooth.
  2. If the sauce is too thick, thin it out with a little extra cream or pasta water. If it’s too thin, add more cheese.
  3. Once you’ve achieved the desired consistency, remove from heat and whisk in the nutmeg.
  4. Season with salt and pepper to taste, then toss in your favorite pasta.

Notes

For serving, consider fettuccine or penne pasta. Add extra Parmesan and fresh parsley for garnish. Can be paired with a green salad or garlic bread. For variations, try adding sautéed mushrooms, spinach, or cooked chicken/shrimp.
