Ingredients
  

For the rolls
  • 8 pieces Rice paper wrappers
  • 200 grams Noodles (like rice vermicelli or similar)
  • 1 cup Fresh vegetables (e.g., carrots, cucumbers, bell peppers) Sliced into thin strips
  • 1 cup Aromatic fresh herbs (e.g., mint, cilantro, basil) Chopped as preferred
For seasoning
  • 2 tablespoons Soy sauce or your favorite dipping sauce
  • 1 tablespoon Oil (for brushing) Use for crisping the rolls

Method
 

Preparation
  1. Cook the noodles according to the package instructions and let them cool.
  2. Prepare your vegetables and herbs by slicing them into thin strips for easy assembly.
Assembly
  1. Dip a rice paper wrapper in warm water for a few seconds until it softens.
  2. Lay the wrapper on a clean surface. In the center, add a small amount of noodles, vegetables, and herbs.
  3. Fold the sides of the wrapper over the filling, then roll tightly from the bottom to the top.
  4. Brush the outside of the rolls with a little oil to ensure they become crispy.
Cooking
  1. Place the rolls in the air fryer basket and cook at 375°F (190°C) for about 8-10 minutes or until they are golden and crispy.
  2. Serve immediately with soy sauce or your favorite dipping sauce.

Notes

Store leftovers in an airtight container in the refrigerator for up to two days. Reheat them in the air fryer for a few minutes to regain their crispiness. Add lime juice or sesame oil for extra flavor if desired.
